Chocolate Teddy Bear Family Biscuits

These teddy bear families will delight young children and can of course be decorated in a variety of ways. We have decorated them very simply with a milk chocolate topping but they would look very appealing if decorated with brightly coloured icing or coloured fondant icing cut into shapes to look like clothes.
Makes approx 5 complete teddy bear families
Biscuits
175g ( 6oz) unsalted butter
75g ( 3 oz) caster sugar
1 egg, medium, beaten
300g ( 11oz ) plain flour
50g ( 2oz) cocoa powder
½ teaspoon baking powder
Decoration
150g ( 5oz) milk chocolate
coloured sweets etc
writing icing tubes in black and red
Preheat oven to 180ºC, 350ºF, Fan oven 160ºC, Gas mark 4
Cut the butter into small pieces and put into a large bowl with the sugar.
Cream the butter and sugar together until light and creamy.
Beat in the egg a little at a time, beating well between each addition.
Sift together the flour, cocoa powder and baking powder.
Add the flour mixture gradually to the creamed mixture, blending with a wooden spoon, then working the mixture by hand to make a fairly firm dough.
Knead the dough lightly on a floured surface then wrap in cling film and chill in the refrigerator for about 15 minutes.
Dust the worktop with flour and roll out the dough to a thickness of approximately 0.25cm (1/8”).
Using the teddy bear cutters cut out as many shapes as possible from the dough.
Place the shapes on baking trays. Re-knead and re-roll any trimmings and cut out more shapes. Continue until all the dough is used up.
Bake for approximately 15 – 20 minutes. Check the biscuits frequently to make sure they do not overcook.
Allow to cool on the baking trays for a few minutes to firm up, then remove to a cooling rack to cool completely.
To decorate
Break the chocolate into pieces and place in a small bowl over a pan of simmering water.
Gently melt the chocolate until it is smooth and glossy.
Alternatively, melt the chocolate in the microwave.
Spread the melted chocolate on top of each biscuit.
Decorate each teddy as you wish – pipe on eyes and mouths with the writing icing or decorate more elaborately if preferred.
Leave the chocolate to set.
Store in an airtight tin.
