Cassis Crème Cocktail

This is a deliciously creamy cocktail. The quantity here makes sufficient for one serving – it is very easy to increase the quantity for the number of guests you have.

This cocktail is a very pretty pink colour and if preferred it can be left to stand for a few minutes before drinking - it will then separate into layers.

Serves 1

30ml ( 1 fl oz ) Crème de Cassis
30ml ( 1 fl oz ) vodka
60ml ( 2 fl oz ) Champagne or sparkling wine
1 tablespoon grenadine
squeeze of lemon juice
1 scoop lemon sorbet
1 tablespoon double cream

Put all the ingredients into a food processor or blender.

Blend until smooth and creamy.

Pour into glasses.

Serve very simply with a straw or add umbrellas, swizzle sticks and sparklers etc.
