Chocolate Fudge
Use Flexible Mould -

Delicious little bricks of fudge which make an ideal gift if arranged in a pretty box lined with tissue paper.
We have added cherries and whole blanched almonds on top of ours but you could add any fruits or nuts, crystallized ginger, angelica or sugar flowers etc to make them special.
Makes 20
25g (1oz) unsalted butter
110g ( 4oz) plain chocolate, chopped
200g (7oz) mini marshmallows
1 teaspoon vanilla essence
Topping
5 glacé cherries, halved
10 whole blanched almonds
Put the butter, chocolate, marshmallows and vanilla essence into a saucepan.
Heat gently, stirring continuously until all the ingredients have melted together and are quite molten and runny.
Stand the mould on a tray.
To make it easier to fill the mould, pour the fudge mixture into a jug. Stir well and then carefully pour the fudge mixture into the cups, spreading if necessary with the tip of a knife.
Topping
Place a piece of cherry on top of 10 of the sweets. Place a blanched almond on top of the remaining 10 sweets.
Transfer the mould to the refrigerator.
Leave to set for 24 hours.
To unmould
Simply push the bases of the cups and lift out the sweets.
Arrange in a pretty tissue filled box or place on a serving platter.
Will keep for several weeks in an airtight container.
