Beefburgers or Kebabs with parsley mayonnaise Print friendly page

This is an easy recipe which makes 4 generous beefburgers or, if you prefer you can use the recipe to make 4 kebabs. Alternatively, make 2 burgers and 2 kebabs. Use a good quality minced beef – then there will be less shrinkage and the flavour will be excellent. If you are using the wooden skewers for the kebabs remember to soak them before use to prevent them charring on the barbeque.


Makes 4

Beefburgers or kebabs

1 tablespoon oil
1 onion, finely chopped
500g ( 1lb ) minced beef
few drops Worcester sauce
salt and freshly ground black pepper
1 egg, medium, beaten

Mayonnaise

6 tablespoons mayonnaise
1 clove garlic, crushed
1 small bunch parsley, chopped
few drops lemon juice

To serve

4 ciabatta rolls
lettuce leaves
1 red skinned onion, sliced into rings
1 beefsteak tomato, sliced



Beefburger or kebabs

Heat the oil in a frying pan. Add the onion and fry gently until softened but not browned. Remove the onion from the pan and drain.

Put the onion, minced beef, Worcester sauce and salt and pepper into a bowl.

Mix together very thoroughly.

Add sufficient egg to bind the mixture together. The mixture must not be too soft.

Divide the mixture into four equal sized pieces.

If you are making beefburgers;

Shape the mixture into rounds, then flatten slightly,

Place the beefburgers onto a large plate and cover with cling film, then chill in the refrigerator for about 20 minutes so they firm up slightly.

Cook the beefburgers on a hot barbeque for approximately 15 – 20 minutes, turning them to cook evenly. The beefburgers are cooked when the juices run clear.

If you are making kebabs;

Shape the mixture into rounds then roll into sausage shapes. Push a skewer into each kebab, place the kebabs on a large plate, cover with cling film, then chill in the refrigerator for about 20 minutes so they firm up slightly.

Cook the kebabs on a hot barbeque for approximately 10– 15 minutes, turning them to cook evenly. The kebabs are cooked when the juices run clear.

Mayonnaise

Mix all the ingredients together, spoon into a bowl and refrigerate until required.

To assemble the beefburgers

Cut the rolls in half and toast lightly on the barbeque.

Place lettuce on the bases of the rolls, add onion rings, a beefburger, a spoonful of mayonnaise and top with a tomato slice before adding the lid.

Serve the kebabs with mayonnaise, ciabatta roll and salad.


The beefburgers and kebabs can be made beforehand and can be frozen in their raw state. Defrost fully before cooking.
