Hot Asparagus with rocket salad Print friendly page

Asparagus cooks very well on the barbeque – use the larger asparagus spears for this salad.

This recipe gives a good combination of flavours – the Parmesan cheese is delicious with the asparagus and rocket.



Serves 4 –6

500g ( 1lb ) asparagus spears, trimmed
olive oil for brushing
1 bag rocket
50g ( 2oz) pinenuts, toasted
25g ( 1oz) Parmesan cheese shavings
sea salt and freshly ground pepper
small packet sun dried tomato croutons - optional

Dressing

2 tablespoons Balsamic vinegar
2 cloves garlic, crushed
small bunch coriander,chopped
375g ( 12oz) tomatoes, peeled and chopped
5 tablespoons olive oil


Brush the asparagus with olive oil then place on a hot barbeque and cook for approximately 8 - 10 minutes, turning frequently, until lightly browned and tender.

Arrange the rocket on a large serving plate.

Add the hot asparagus, sprinkle over the pinenuts, cheese and salt and pepper.

Mix together the dressing ingredients and pour over the salad.

Add the croutons – if used.
