Dips and Dressings Print friendly page
A delicious selection of dips and dressings to serve with salads or barbeques.


Tarragon dressing

2 tablespoons tarragon vinegar
grated rind of 1 lemon
½ teaspoon Dijon mustard
1 tablespoon chopped tarragon
6 tablespoons olive oil
salt and freshly ground black pepper

Put all the ingredients in a bowl and whisk together very thoroughly until well combined.


Cream cheese and chive dip

225g ( 8oz) cream cheese
2 tablespoons mayonnnaise
1 teaspoon lemon juice
2 spring onions, chopped
small bunch chives, chopped

Mix together the cheese and mayonnaise. Stir in the lemon juice, onions and chives – reserving a few chives for garnish.

Spoon into a bowl and sprinkle with the remaining chives.



Herb Mayonnaise

small bunch flat leaved parsley
small bunch coriander
few chives
6 tablespoons mayonnaise
1 clove garlic, crushed
few drops lemon juice


Put the parsley, coriander and chives into a food processor and process until chopped.

Add the mayonnaise, garlic and lemon juice to the processor and wiz for a few seconds until well combined. Spoon the mixture into a bowl


Tomato and Balsamic dressing

2 tablespoons Balsamic vinegar
2 cloves garlic, crushed
small bunch coriander, chopped
375g ( 12 oz) tomatoes, peeled and chopped
5 tablespoons olive oil

Put all the ingredients into a bowl and whisk together until well combined.
