Strawberry Orange Cakes
Use Flexible Mould -

Quick and simple little cakes to make – use any flavour yoghurt in this recipe as a variation.
Makes 6
110g ( 4oz) plain flour
¼ teaspoon bicarbonate of soda
75g ( 3oz) caster sugar
50g ( 2oz) unsalted butter
120g carton strawberry yoghurt
1 egg, medium, beaten
grated zest of 1 orange
¼ teaspoon orange oil
Icing
110g ( 4oz) icing sugar, sifted
juice of 1 small orange
Decoration
Few chopped flaked almonds
Few glace cherries, chopped
Preheat oven to 170ºC, 325ºF, Fan oven 150ºC, Gas mark 3
Sift the flour into a bowl and stir in the bicarbonate of soda and sugar.
Put the butter into a small pan and melt very gently.
Pour the melted butter, yoghurt and egg into the flour.
Add the orange zest and orange oil and mix until the ingredients are well combined.
Stand the mould on a baking tray.
Divide the mixture between the cups and cook for 10 –15 minutes until well risen and golden brown.
Leave to cool in the mould for a few minutes.
Stand a cooling rack over a tray ( the tray will catch any drips of icing ) turn the cakes out onto the rack and stand them upright.
Icing
Put the icing sugar into a small bowl.
Slowly add the orange juice, mixing to give a thin icing.
Pour the icing over the cakes allowing it to drip over and down the sides. Decorate each cake with a few pieces of almond and some chopped cherries.
Alternatively, simply sprinkle the cakes with icing sugar.
Suitable for freezing
