Use Flexible Mould - 6797

Makes 9


50g ( 2 oz ) sultanas
50ml ( 2 fl oz ) hot tea
110g ( 4 oz) plain flour
½ teaspoon baking powder
¼ teaspoon bicarbonate of soda
50g ( 2oz) unsalted butter
50g ( 2 oz ) soft brown sugar
1 egg, medium, beaten
25g ( 1oz) walnuts, chopped
1 teaspoon vanilla essence
1 ripe banana, mashed


Put the sultanas in a small saucepan. Pour on the hot tea. Bring back to the boil. Turn off the heat and leave to soak for approx 1 hour. The sultanas should soak up most of the liquid and plump up.

Preheat oven to 170ºC, 325ºF, Fan oven 150ºC, Gas mark 3

Sift the flour, baking powder and bicarbonate of soda into a bowl.

Put the butter into a pan and melt gently, then add in the sugar, egg, walnuts and vanilla essence and stir together well.

Pour the butter mixture into the flour. Add the banana and sultanas (including any tea) and mix together well.

Stand the mould on a baking tray.

Divide the mixture between the cups.

Bake for approx 25 - 30 minutes until well risen and golden.

Leave to cool in the mould for a few minutes then turn out onto a cooling tray.
