Mini Pizzas
Use Flexible Mould -

Makes 8
Bases
75g ( 3 oz ) self raising flour
25g ( 1 oz ) margarine
25g ( 1 oz ) Cheddar cheese, grated
2 tablespoons milk
Topping
8 teaspoons tomato purée
1 teaspoon Oregano
1 small slice ham,
25g ( 1 oz ) Mozzarella cheese
2 olives - optional
Preheat oven to 220ºC, 425ºF, Fan oven 190ºC, Gas mark 7
Bases
Sift the flour into a bowl. Cut the margarine into pieces and rub into the flour until the mixture resembles fine breadcrumbs.
Stir in the Cheddar cheese.
Add the milk and mix to a soft dough.
Knead very lightly on a floured board.
Shape into a small round and cut into 8 equal triangles.
With floured hands shape each triangle into a ball.
Stand mould on a baking tray.
Press each round into the cups, shaping to fit the cup.
Filling
Place a spoonful of tomato puree onto each pizza base. Spread the purée evenly – do not spread the purée right to the edges – leave a rim.
Sprinkle a little Oregano onto each.
Cut the ham into small pieces and divide between the pizzas.
Cut the Mozzarella cheese into small cubes and place a few pieces on top of each pizza.
Cut the olives into quarters and place a piece of olive on top of each pizza.
Bake for 10 – 15 minutes until golden brown.
Leave to cool for a few minutes in the mould then lift out each pizza onto a cooling rack.
