Chicken a la Claire Print friendly page
Use Flexible Mould - 6778

Serves 4

350g ( 12 oz ) bag frozen mixed vegetables ( e.g. cauliflower florets, peas and carrots)
4 skinless chicken breast fillets
295g can condensed mushroom soup
2 tablespoons mayonnaise
1 teaspoon curry powder
25g (1oz) fresh white breadcrumbs
25g ( 1 oz ) Cheddar cheese, grated


Preheat oven to 180º C, 350º F, Fan oven 160ºC Gas mark4


Stand the mould on a baking tray.

Arrange the vegetables in the mould.

Place chicken fillets on top of the vegetables.

Mix together the soup, mayonnaise and curry powder. Spread over the chicken.

Mix together the breadcrumbs and cheese. Sprinkle over the top of the sauce.

Bake for 40 minutes until golden brown.

Serve with noodles.
